Orzo is the rice-shaped pasta from Calabria - the most southern toe of Italy. Orzo is delicious served quite plain, though in this luxurious version the slim oval pasta is cooked with saffron, cream and bay leaves and dressed with lemon juice. It makes a very fine dish that is splendid served on its own or as an accompaniment to grilled meat.
