Iced Tea with Mint and Lemon

A frosted glass of iced tea decorated with borage flowers and a sprig of mint is guaranteed to allay the most fearsome thirst on a hot summers day.

Ingredients

  • 3 rounded teaspoons Darjeeling tea leaves
  • 4 sprigs of mint
  • 1

Method

Measure the tea into a jug, add the sprigs of mint and pour on the cold water. Stir well, then cover and chill for 4-6 hours.

Strain the tea into a chilled serving jug, stir in sugar to taste and garnish with slices of lemon, borage flowers and sprigs of mint. Serve the iced tea in glasses with some of the borage flower ice cubes.
