A shrub is a fruit-based cordial similar to the sherbet of the Middle East. For drinking on a hot day, the concentrated syrup is nicest served in thin glasses, and is diluted with plain or carbonated mineral water and ice-cubes.

Ingredients

  • 1 kg (2 lb 3 oz) raspberries

Method

Slowly bring the raspberries almost to the boil, stirring until the fruit begins to give up its juice. Remove from the heat and strain the fruit juice through a fine nylon or muslin sieve, gently pressing the fruit with a wooden spoon to extract all the juice.
