You can make lovely pancakes without using any eggs or dairy milk. The basic recipe makes thin, English-style pancakes. If you make the batter with less milk, you can spread it over the pan and cook it for a bit longer to make thicker, ‘wrap-style’ pancakes; or use an even thicker batter to make lovely American-style, small puffy pancakes.
