Brought up as a vegetarian, I have never eaten tuna, but I have it on the good authority of those who have that this recipe ‘hits the tuna spot’ for them. I must say, I really love it, both as a sandwich filling and as part of a salad plate.
Process the jackfruit, nori and mayonnaise in a food processor until you have a flaky, tuna-like mixture. Season with a dash of vinegar and salt to taste.
