If you buy a really firm tofu, you can marinade it in olive oil and garlic, then griddle it until it has some deep-brown markings on it – the taste and texture is very similar to that of halloumi cheese. Add some minty tzatziki, a simple tomato salad, black olives and toasted pitta bread, and you could be sitting at a Greek taverna on a balmy night: listening to the lapping water, seeing the reflection of the harbour lights and watching the stars coming out.
