This is a quick and easy recipe for these crisp oven-baked aubergine (eggplant) slices, which taste as though they have been battered and deep-fried. They make a lovely snack, or you can add a handful of rocket (arugula) leaves and perhaps a few oven-baked chips (fries) to make more of a meal of it. They’re delicious served with the Quick Creamy Caper Sauce, which you can mix up while they’re in the oven.
