The combination of cauliflower, olive oil, maple syrup and the red spice sumac, with its addictive, lemony flavour, makes this dish as pretty to look at as it tastes good to eat. I find that the strength of sumac varies with the brand – it’s worth getting a really good one. I love sumac and tend to put a lot on!
Spread the cauliflower slices in a single layer over a baking sheet, drizzle with the olive oil and maple syrup, ensuring the slices are well coated, then sprinkle with about ½ tsp sumac and a little salt to taste.
