There are a wide range of vegan sausages available to buy, but it’s also quick and easy to make your own and these are delicious – I love them! Try them as part of a cooked vegan breakfast, as hot dogs, or fried crisp and dipped in a little mustard, or, as here, with creamy mashed potato and moreish onion gravy.

  • 200 g (7 oz/ cups) walnut halves

Method

Place the potatoes in a large saucepan and cover with cold water. Bring to the boil over a medium heat, then reduce to a simmer and leave to cook until just tender, 15–20 minutes.

Meanwhile, make the sausages. Put the walnuts, bread and onion into a food processor and pulse briefly to break them down a bit, then add the paprika and garlic powder and process in bursts, until you have a f
