Heat the oil in a large saucepan over a low heat, add the onion and red (bell) pepper and cook gently for about 15 minutes, until starting to become tender. Add the garlic, chopped tomatoes, kidney beans and chilli powder and season with salt and pepper to taste. Cook, stirring from time to time, for a further 10 minutes or until all the vegetables are tender.
Serve with cooked rice or
