This is one of my husband’s favourite recipes. To make it, you need a fairly firm tofu as well as a flavoursome nori – that pressed seaweed that looks like sheets of carbon paper and should say ‘toasted and ready to use’, or ‘roasted’ on the packet. If you’re serving chips, start cooking them before you start frying the tofu, so that everything is ready together.
