This is one of my favourite really quick meals. Okay, you do have to wait for the lentils to soften, but that only takes about 20 minutes; in around 30 minutes, you have a filling, tasty meal. It’s lovely with some crunchy poppadums and maybe some mango chutney on the side. If there is any left over, it makes nice fritters, which are very easy to make, simply mixed with some soft breadcrumbs and fried in oil.
