When choosing a plain vegan yogurt look for one with the fewest ingredients. I also like to vary the kinds of milk and yogurt I used, rather than depending on one, such as soya: but my main rule of thumb is to choose the most natural one I can, with the fewest ingredients and no unpronounceable additives!
Just mix the yogurt and mint together in a small bowl, season with a little salt, and serve.
