We love this version of Caesar salad and eat it as a main course in its own right. Of course, classic Caesar salad is generally served as a first course and includes slivers of Parmesan cheese, and you could indeed include vegan Parmesan or perhaps a scattering of the Parmesan, but we find the combination of lovely crisp Little Gem or Cos lettuce leaves, crunchy croutons warm from the oven and creamy Vegan Mayonnais
