Ingredients: 2 little gem lettuces (or similar); salt and freshly ground black pepper, to taste; 4 tbsp light olive oil; 2 tbsp water; 1 tbsp toasted sesame oil; 1 small white onion, sliced; thumb-sized piece of fresh root ginger, peeled; 1 tsp sesame seeds or gomasio (roasted sesame seed and salt seasoning), to garnish; 150 g (5½ oz) carrot, sliced; 2 tbsp rice vinegar or cider vinegar; 1 tbsp maple syrup; 2 tomatoes, halved and thinly sliced; 1 small purple onion, sliced; ½ cucumber, peeled and sliced; 1 tbsp sweet white miso paste
