This may seem like an unusual way to make lasagne, but it works really well and it’s delicious. Once you’ve made the ‘cheese’ sauce and the crunchy topping, which can both be done in advance, it’s very quick to put together. The topping makes more than you’ll need for this recipe, but it keeps for 2–3 weeks in the refrigerator and is useful for other recipes where you want a ‘cheesy’, crunchy finish. You can also vary the layers according to the actual size and shape of your baking dish.
