This is very quick to put together – it’s something I came up with one evening for supper when there was nothing much in the fridge but I wanted to use up some asparagus, button mushrooms and tofu! The sea vegetable garnish is optional, but makes a nice flourish on top. I love sea veg and keep several different types in my store cupboard.

This makes enough for two people but the quantities can easily be doubled for four.
