This is a lovely vegan version of this French classic. It’s a great dish for entertaining because, although it may seem like quite a lot of work, it’s actually quite easy. The crêpes and refreshing orange sauce can be made in advance, then heated through in the pan at the last minute, finishing with the brandy flaming, if you like. Quite dramatic and utterly delicious.
