Method

Preheat the oven to 160°C/325°F/gas mark 3.

Put the flour, bicarbonate of soda (baking soda), ginger, cinnamon, nutmeg and allspice into a food processor and process briefly to combine, then add all the remaining ingredients and process until a soft dough has formed.
