This wonderful fruit cake is delicious eaten just as it is, but it’s also very special when covered in almond paste and icing for a celebration.

Preheat the oven to 160°C/320°F/gas mark 3. Grease a 20cm (8in) tin (pan) with vegan spread and line with 2 layers of baking parchment.
