This is a big, voluptuous chocolate cake with a glossy, fudgy icing. It’s a real showstopper and makes the perfect cake for any celebration or special occasion.

Ingredients

  • 350 ml (12 fl oz/scant cups) plant milk

Method

Preheat the oven to 180°C/350°F/gas mark 4. Lightly grease two 20cm (8in) cake tins (pans) and line the bases with baking parchment.

Mix the milk with the lemon juice in a bowl and set aside to curdle.

Sift the flour, baking powder, bicarbonate of soda (baking soda) and
