Butterscotch Sauce

This unctuously sweet sauce will transform a simple bowl of vegan vanilla ice cream into a real celebration dessert. The inspiration for this came from a Delia Smith recipe that I decided to try and veganise one day with great success. It will keep in a jar in the fridge for several weeks.
