This Mediterranean-inspired marinade really benefits from a good, flavorful extra virgin olive oil (a discussion of olive oils). My favorite use of this is with chicken breasts, thinly cut pork loin chops, or on fish like sea bass, salmon, or shrimp.


  • 3 tablespoons chopped mixed fresh herbs, such as parsley, rosemary, and chives
  • 2 teaspoons finely chopped fresh garlic
  • Juice and finely grated zest of 1 large lemon
  • 1 tablespoon grainy Dijon mustard (optional)
  • cup extra virgin olive oil


Whisk all the ingredients together. Store covered in the refrigerator for up to 3 days.
