This Mediterranean-inspired marinade really benefits from a good, flavorful extra virgin olive oil (a discussion of olive oils). My favorite use of this is with chicken breasts, thinly cut pork loin chops, or on fish like sea bass, salmon, or shrimp.
Whisk all the ingredients together. Store covered in the refrigerator for up to 3 days.
