You can add all manner of things to the skewers—tropical fruits, cherry tomatoes, mushrooms, etc. Reduce the marinade over high heat for a few minutes to thicken it for a good drizzling or dipping sauce.
Prepare a Charcoal fire or preheat a gas or stovetop grill.
About 20 minutes before you plan to grill the beef, combine the meat and about two-thirds of the Mojo Marinade in a shallow dish or resealable plastic bag. Turn the beef occasionally to make sure all sides come in contact with the marinade.
Thread the beef onto skewers with the additional ingredients. You may have a few skewers that are mostly meat or lots of mixed skewers. Grill over high heat until the meat is rare or medium-rare or to your taste. Serve immediately with the reserved Mojo Marinade on the side.
