  • cups oven-dried zucchini, sliced or diced (from about 1 pound fresh)
  • cups oven-dried cherry tomatoes (from about pounds fresh)
  • ¼ cup pitted and sliced Kalamata or other olives
  • 1 tablespoon mixed chopped fresh herbs, such as chives, parsley, and chervil
  • 1 teaspoon finely grated lemon zest
  • Drops of fresh lemon juice to taste
  • Salt and freshly ground pepper


In a Bowl, combine the zucchini, tomatoes, olives, herbs, zest, and juice. Season to taste with salt and pepper.
