  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon minced shallots or roasted garlic
  • 2 tablespoons mixed chopped fresh herbs of your choice
  • 2 teaspoons fresh lemon juice
  • Salt and freshly ground pepper


In a small pan, heat the butter and oil over medium heat. Add the shallots and cook, stirring, until they have softened but not browned, about 3 minutes. Remove the pan from the heat, stir in the herbs, lemon juice, salt, and pepper, and keep warm.
