  • ¾ cup seasoned rice vinegar
  • 2 tablespoons finely chopped shallots
  • ¼ cup fresh lime juice, strained
  • ¼ cup finely chopped fresh cilantro leaves
  • 1 teaspoon seeded and finely chopped jalapeño chile, or to taste
  • Salt and freshly ground pepper to taste


Combine all the ingredients and refrigerate for at least 30 minutes to let the flavors marry and develop. Can be made a day ahead and stored covered in the refrigerator.
