  • 2 teaspoonsfinely minced fresh ginger
  • 2 teaspoonspeeled and finely minced fresh garlic
  • 2 tablespoonssoy sauce
  • ½ cupThai sweet chilli sauce, or to taste (I like Mae Play brand)
  • 2 tablespoonsfresh lime or lemon juice, or to taste
  • 2 to 4 tablespoonshomemade chicken stock or your favorite canned broth, or water


Combine the ginger, garlic, and soy sauce in a blender and pulse briefly. Add half the chilli sauce, the fresh lime juice, and enough stock to achieve the desired consistency, and pulse a couple of times more. Taste and add additional chilli sauce to your own taste. Store covered in the refrigerator for up to 1 week.
