1cupcanned tomato juice (I like Muir Glen organic)
1½cups homemade vegetable, corn, or chicken stock or your favorite canned broth
1½tablespoons prepared or freshly grated horseradish
1tablespoonfresh lemon juice
Drops of hot sauce, such as Pickapeppa or Tabasco (optional)
Sea salt to taste
Whisk all the ingredients together at least an hour before serving to allow the flavors to marry. If serving hot, it’s best just to warm the broth through—don’t boil or even simmer—to release the fresh aromas of the horseradish and lemon.
