ADD A quarter inch or so of peanut or vegetable oil to a skillet, along with very thinly sliced shallots or garlic. Cook over medium-low heat for 3 to 5 minutes, stirring gently to allow the chips to brown slowly and evenly. When just golden brown, use a slotted spoon to remove them from the oil and drain on paper towels until cool. They will turn darker brown as they stand.
