This sauce can be used as a marinade, then the fish can be cooked in it and finally a little can be poured over the tuna. The recipe suggests that the sauce is also suitable for bonito, which might be replaced by mackerel.


  • tsp lovage seeds
  • ½ tsp celery seed
  • generous freshly ground black pepper


Roast and grind the two spices, add the pepper and combine in a bowl with the liquids and herbs. Beat smooth and pour it over the fish and marinate for 2–3 hours.
