  • 10 oz/275 g haddock, cod, hake [or salmon] fillets

Method

Poach the fish and dates for 10 minutes, drain, grind, and mix with the remaining ingredients.

Make and bake as above, for 20 minutes. Alternatively, deep-fry in olive oil, or stew in a wine and sugar syrup.

Chewets are best served hot.
