Chowder is a speciality on the Atlantic coast of America—a soup-stew with infinite variations on the fish, potatoes and onions theme.
Fry the bacon and onion without browning, add potatoes (cut into ½ in. dice), fish, mushrooms, stock or water, salt and pepper.
Simmer gently for 15 minutes until fish and potatoes are cooked, cool slightly. Stir in the cream and sprinkle with parsley before serving.
