  • 3½-4 lb. Ayrshire Roll or middle cut bacon joint
  • 1 oz. butter

Method

Soak bacon joint in water overnight. Form bacon round a jam-jar* and tie firmly. Cover with cold water in a saucepan and simmer for half the cooking time, allowing 25 minutes per pound and 25 minutes over. Remove and allow to cool slightly. Remove skin.
