  • 3½-4 lb. middle-cut bacon joint (or Ayrshire Roll)
  • 2 medium-sized cooking apples, peeled, cored and chopped

Method

Soak the bacon joint in cold water overnight. Form bacon round a jam-jar* and tie firmly. Cover with cold water in a saucepan and simmer for half the cooking time, allowing 25 minutes per pound and 25 minutes over. Remove and allow to cool slightly. Remove the skin.
