Vichyssoise—a chilled potato and leek soup—is a classic French dish and surprisingly easy to make. It’s also seasonally versatile (potatoes are readily available year-round, and leeks are never hard to find). We made it at the very first cooking school I attended, when I was in Paris for a summer during college. Years later, I put this version on the menu at annisa when we opened.
