The old-fashioned combination of crab, grapefruit, and avocado is a regular on French menus. I wasn’t really thinking about that when I came up with this salad; I was focused on the equally timeless (and French) partnering of lobster and avocado. I see the strong resemblance to the classic triad now. Consciously or not, I replaced that trio’s original crustacean with lobster and included the citrus in gelée form.
