Here’s a French classic—steak frites—via Seoul. When I opened Mirezi in the mid-’90s, I was sent to Korea to take a week of cooking classes and to meet the head honchos of the company that owned the new pan-Asian restaurant. One of the recipes I learned was the marinade for bulgogi, which some might call Korea’s national dish. It’s composed of thin cuts of beef, grilled and served with lettuce wraps. This is an American take on that specialty and my first “signature” dish, if there ever was
