Wherever lamb is raised for meat, the fries/testicles are considered a great delicacy. They are referred to by various names such as Rocky Mountain/prairie oysters, and swinging steak in the United States, to caprices de femme (lady’s whims) in France. Whatever one calls them, they are excellent as an appetizer served with drinks.
