I had this ice cream at a friend's house in Shiraz; it’s made just like the famous Persian saffron ice cream (without eggs) except the sugar is replaced with dates, which is very common in southern Iran. I make this ice cream using whole dates, but you can also use ¾ cup/180 g date molasses in place of the whole dates. Salep/sahlab is the flour made from the tubers of an orchid common in Iran a
