A creamy, gently spiced chicken kebab, flavoured with mace.
THE CHICKEN: Clean, remove the skin and cut each into 8 pieces.
THE FIRST MARINATION: Remove stems, wash, slit, deseed and finely chop green chillies. Mix the chillies, pepper, mace, salt and the ginger and garlic pastes with vinegar in a large bowl and rub the chicken pieces with this mixture. Keep aside for 15 minutes.
