THE LAMB: Clean, debone and cut into 1-inch boti.
THE VEGETABLES: Peel, wash and chop onions. Peel garlic. Scrape, wash and shred ginger. Remove stems, wash, slit, deseed and chop only 10 green chillies. Wash and chop tomatoes. Clean, wash and chop coriander.
THE WHOLE SPICES: Pound coriander seeds, red chillies and black
