A colourful combination of mushrooms and paneer, cooked with tomatoes and tempered with black cumin.
THE MUSHROOMS: Slice off earthy base of the stalk, slice and wash just prior to cooking.
THE PANEER: Grate coarsely.
THE REMAINING VEGETABLES: Peel, wash and dice onions. Wash tomatoes, cut into quarters, deseed and dice. Scrape, wash and cut ginger into juliennes. Clean, wash and chop coriander.
