Preparation

THE FISH: Clean, wash, pat dry, make fillets and cut each fillet into two. Make horizontal slits in the pieces to create pockets. Sprinkle vinegar and salt, marinate for 30 minutes.

THE BANANA LEAVES: Trim, wash and wipe.
