Preparation

The BITTER GOURD: Wash, peel, reserve the scrapings and slit on one side. Rub salt on gourd and mix with scrapings, keep aside for at least 30 minutes (preferably in the sun). Then squeeze the gourd and the scrapings separately in napkins to ensure both are completely devoid of moisture. (The procedure ensures that the bitterness is considerably
