The rice pancake that is synonymous with South Indian food. If one dish has dominated the cuisine of the Southern half of the Sub-continent it is the Dosai. So overpowering has been its influence that very often even people in the rest of India believe that the Southerner’s staple is Dosai-Sambhar.

  • 225 g/8 oz Parboiled Rice
  • 75 g/3

Method

Preparation

THE RICE & LENTIL: Pick, wash in running water and soak alongwith fenugreek seeds overnight.

THE BATTER: Put the soaked ingredients in a blender, add salt and water (approx 50ml/3 Tbs + 1 tsp) and make a fine paste. Remove to a large bowl and keep aside for at least 5 hours.

THE TAWA: Peel an onion, cut into half, tie
