A mixed—vegetable relish, spiced with cumin and garam masala and sweetened with jaggery or sugar.
THE VEGETABLES: Wash and cut cauliflower into florets. Peel, wash, cut turnips into halves and then make medium thick slices (⅛-inch). Peel, wash and cut carrots into batons. Peel, wash and finely chop onions. Spread cauliflower, turnips and carrots on a tray and keep in the sun or in a warm place for drying (2-3 days).
