Ham hock is relatively inexpensive and like other similar cuts should be slow-cooked, but the time invested is well worth the trouble. This is incredibly simple, but delivers the most delicious results and utilizes the cooking liquor that is so often discarded. You could make the mustard fruits yourself but it is time-consuming and there are some exceptionally good bottled varieties around.
