Pollack is the sustainable alternative to the much-loved cod. It is currently more sustainable and equal in both size and stature to its now over-fished cousin. I’ve put seakale in here because it’s a luxury ingredient that you rarely find in the shops, but is well worth seeking out. It is found for just a few weeks from the middle of February. If you can’t find it, the shrimp butter will liven up any green accompaniment.
