You can dilute it with water for a really refreshing summer drink or add a shot or two of gin, if you feel so inclined. I use the cordial to make jellies, granitas and elderflower posset or fool. It can also be used to sweeten the fruit in other seasonal puddings.

Ingredients

  • 12 elderflower heads
  • 900 g caster or granulated sugar
  • 600 ml

Method

Wash the elderflower heads gently and pick over to check for bugs, then place in a large bowl.

Put the sugar and water into a pan and bring to the boil, stir and simmer to completely dissolve the sugar.

Meanwhile, take the lemon zest off in thick strips and place in with the elderflowers. Then add the rest of the lemons, cut into slices. Pour the boiling syrup over the lemon and
